RECIPE
Summer Berry Trifle
INGREDIENTS
Around 4 standard-sized muffins (or the equivalent amount of cake)
Summer fruits (I used brambles, strawberries, and cherries, but you can use whatever soft fruit you want!)
Several sheets of gelatine (or a quick mix jelly/Jell-O sachet if you'd prefer)
Custard
Whipping cream
Chocolate chips or bar chocolate for grating (I prefer dark but use whatever you prefer)

Well, hello again, lovely readers! Welcome back to The Gingerbread House blog, written as always by me, Ginger. It's been a wild and weird few weeks for us here at The Gingerbread House. We finally opened our doors and were blown away by the enthusiasm of our many customers who came by for ice cream, muffins, cakes, cookies, and a few seasonal, limited edition treats. So, I know an issue that a lot of you struggle with, and send me a lot of messages about, is how to avoid food waste. Maybe there's a big event to cater for but you end up making or ordering too much of something. Maybe you need to use up some ingredients but can't eat the goodies quickly enough before they go stale or mouldy. We've all been there, don't worry.
I recently found a magical little grove in my local woods filled to bursting with brambles. I filled my bags to the brim with the delicious berries but knew I only had a few days to use them up before they spoiled (and were wasted). So I had to get inventive. Some went into ice cream, others I made into jam. More went into muffins or I froze them for a quick snack in this brutal summer heat.
The recipe I'm going to give you today is great for reducing food waste. Whether you need to use up some yummy baked goods before they go off or have a glut of fruit you need to put to good use, this fresh summer treat is perfect.
Today, we're going to make a delicious summer berry trifle. Trifle is a classic dessert so for my international readers, you'll get a real taste of English summertime with this recipe. What you'll need is a deep dish of some kind with a wide base. I use a glass trifle dish my family has owned for years, but you can use whatever you have in your kitchen that fits best!
The amount of ingredients will vary depending on the size of your dish, but the wonderful thing about trifle is that it's very difficult to get it "wrong". There is no "wrong"; there's only a delicious new adventure!
